You will need:
- 300g Peeled mandarins and zest of 2 mandarins (Approximately 260g)
- 200g Flour
- 170g Sugar
- 2 Eggs
- 70g Vegetable oil
- 16g Baking powder
- A pinch of Salt
- 75g Dark chocolate
Start by blending mandarin segments and their zest in a blender until you achieve a puree consistency. Then, add sugar and eggs, and blend again with the blender. Next, add oil and salt. Now, add sifted flour and baking powder, and blend once more.
Transfer the batter into a round 18cm cake tin (if unavailable, any similar-sized tin will do) and bake at 170 degrees Celsius for 45 minutes.
Before removing the cake from the oven, check for doneness. Let it cool thoroughly and serve!
Melt butter and chocolate, mix thoroughly, and then pour the mixture over the cake.
