Cheesy Eggplant Chicken Rolls with Sausage Stuffing

You will need:

  • Chicken or turkey breast.
  • Eggplant
  • Cheese
  • Fresh sausage meat
  • Bread crumbs
  • Olive oil
  • Wine

Fry the eggplants.

Create your rolls by placing slices of eggplant, sausage meat, and cheese on the chicken.

Roll up the rolls and secure them tightly with toothpicks.

Pour oil into a pan.

Coat the rolls with either flour or breadcrumbs.

Fry the rolls and add wine. Allow the wine to evaporate.

Now, if necessary, you can add a little water and cook your rolls with the lid closed until the filling is fully cooked.

You can also bake these rolls in the oven.
