Cheesecake Cookies


  • 200g Whole Grain Flour
  • 200g Oat Flour
  • 200g Unsalted Butter, room temperature
  • A pinch of Salt
  • 130g Brown Sugar
  • 15g Baking Powder
  • 4 tablespoons Milk

  1. To start, mix the flour with the baking powder, sugar, and salt.
  2. Then add the butter and blend.
  3. Add the milk. I needed 4 tablespoons, but you might need 1 more tablespoon.
  4. The consistency of the dough should be like shortcrust pastry, soft and crumbly.
  5. Wrap the dough in plastic wrap and refrigerate for 1 hour.
  6. Then roll out the dough. Cut out cookies with a cookie cutter and bake for 12-15 minutes at 180°C.
  7. Let the cookies cool completely before removing them from the baking sheet.
