Winter Cake

Why Winter? Honestly, there is no answer to this question, but the rich ingredients in this recipe remind me of cozy winter evenings and a fragrant cup of tea!

You will need:

  • 20-22cm Baking pan
  • 4 Eggs
  • 180g Sugar
  • 230g Flour
  • 50g Potato starch
  • 16g Baking powder
  • Zest of 1 tangerine
  • Juice of 1 tangerine
  • 1 Banana
  • 1 Apple
  • 50g Vegetable oil
  • 80g Nuts

To start, prepare the tangerine zest, chop the apples, and pour the juice of one tangerine over them. Crush the nuts (not too finely).

Whisk eggs with sugar and tangerine zest until fluffy and white.

Add vegetable oil and gently mix with a silicone spatula.

Add sifted flour, starch, baking powder, and gently mix with a silicone spatula using top-down movements.

Mash the banana with a fork and add it to the batter, stirring with a silicone spatula. Add nuts and apples. Mix all ingredients until homogeneous.

Transfer the batter to the baking pan.

Bake for 45-50 minutes at 170°C. It took me an extra 10 minutes, so be sure to check the readiness of the cake before removing it from the oven.
