Coffee and Chocolate Cake

You will need:

  • 3 eggs
  • 200g sugar
  • 250g all-purpose flour
  • 10g baking powder
  • 80ml espresso coffee 
  • 100g butter or 80g of veg. oil
  • 80ml milk
  • 65g dark chocolate
  • Powdered sugar, to decorate

 

  1. In a small bowl, melt the dark chocolate and butter pieces in the microwave for about a minute. Stir, and if necessary, microwave for another 30 or 60 seconds.
  2. In a separate bowl, beat the room temperature eggs with the sugar.
  3. Add the melted butter and chocolate to the egg mixture and mix.
  4. Now, add the coffee.
  5. Also, add the milk and mix everything well.
  6. Sift the flour and baking powder, then gradually add it to the mixture, stirring until you have a creamy, lump-free batter.
  7. Butter and flour a cake pan (a 22 cm diameter bundt pan was used in this recipe, but a 24 cm pan will also work). Pour the batter into the pan and bake the cake in a preheated oven at 180°C (350°F) for 30-35 minutes. Do the toothpick test after 30 minutes.
  8. Let the cake cool slightly, then remove it from the pan and let it cool completely on a wire rack. Finally, decorate it with powdered sugar.
