Cake Tiramisu with Sponge Cake

Do you love tiramisu?! I already have the classic tiramisu recipe on my page, but this version is for those who need a festive cake!

You will need:

26 cm round cake pan

Sponge cake:

  • 5 eggs
  • 175 g sugar
  • 150 g flour
  • 50 g potato starch

Coffee soak:

  • 250 ml coffee
  • 100 g sugar

Cream:

  • 500 g mascarpone
  • 500 ml heavy cream
  • 100 g water
  • 340 g sugar
  • 10 egg yolks (approximately 175 g)

For decoration:

  • 200 g Savoiard cookies
  • Cocoa powder

Start by preparing your cake with the sponge cake.

  1. Beat the eggs with sugar until they form stiff peaks. It will take about 10 minutes. Sift the flour and starch separately.
  2. Add them to the egg mixture and gently mix with a silicone spatula. Bake for 40 minutes at 180°C (350°F).
  3. Let the baked sponge cake cool.

Start preparing the cream.

  1. You will only need the egg yolks.
  2. Separate the yolks from the whites and start beating the yolks at medium speed. (About the whites, we’ll talk in the next recipe 😉)
  3. Meanwhile, in a saucepan, combine water and sugar. Heat it to 121°C (250°F) and pour the syrup into the beaten yolks while continuing to beat.
  4. Separately, beat mascarpone and heavy cream together.
  5. Now, gently fold the yolks into the mascarpone cream using a silicone spatula.
  6. Prepare coffee for soaking the sponge cake. Mix it with sugar.
  7. Divide the sponge cake into 3 parts and the cream into 3 parts.

Start assembling your cake.

  1. In this case, you will need a cake ring to prevent the cake from falling apart 🙈🤗
  2. Begin by placing the first layer of sponge cake at the bottom and then arrange the ladyfinger cookies around the edge, securing each one with the base of the sponge cake.
  3. Dampen the sponge cake with coffee and spread the first layer of cream.
  4. Repeat the same process with the subsequent layers.
  5. The final layer will be the cream, and then dust it with cocoa powder. Refrigerate the cake overnight.
  6. Before serving, remove the cake ring and tie a ribbon around it 😉. Decorate as you like 🎂 Of course, when you decide to cut the cake, remove the ribbon 😄 don’t eat it ☝🏻
