You will need:
- 200g Water at room temp.
- 45g Condensed milk
- 330g Flour (preferably Manitoba)
- 25g Sugar (brown or plain)
- 5g Salt
- 50g Cold Cream. Butter
- 8g Fresh yeast
- Dissolve the yeast in the water and knead with the rest of the ingredients (except the butter) until elastic. I kneaded in a dough mixer.
- Once the dough becomes elastic and gathers around the nozzle of your dough mixer, add the butter and continue kneading until smooth and elastic.
- Spread the dough out on the table and work through the folds a couple of times.
- Then take the dough to rise in a warm place (+23/25 degrees) I suggest you put it in the oven with the light on.
- Once the dough has doubled in size, divide into 9 portions and form into balls.
- Take it away to go up again.
- Then make funnels in the middle of each ball and put either custard or jam... (you can find the recipe for custard on my website)
- Brush the buns with egg yolk and bake at 180 degrees for about 20-30 minutes until golden.
